The Company

Unlike other importers, we don’t use distributors or middlemen but source directly from butchers and farmers across Italy and France to bring a unique range of charcuterie and cheese to London.

We started out in 2005, travelling to Italy every few weeks in search of the best parmesan which we hand selected and sold at Borough Market. Expanding our product range slowly from there, three years later we became The Ham and Cheese Company.

Since then we have been developing our network of remarkable producers in almost every region of Italy and southwest France. We visit them regularly to talk, eat and learn, all of us linked by similar values: taste, authenticity, tradition and bringing joy to peoples’ lives through food.

Working in these countries where each province, town and family boasts its own recipes and traditions, our fundamental aim has remained consistent: to sell food that is an expression of the artisan who makes it and the place in which it originates.

Spa Terminus

Opening Times:
Saturday 8am – 2pm

Our maturing rooms are located in a Victorian railway arch in Bermondsey. The cool, damp brickwork provides perfect conditions for all our products and an ideal space for the training sessions, retail and tasting events that we run during the year.

We moved to this area in 2012 with the shared vision of creating a community of food businesses, all involved in high quality maturing, wholesaling and production. There are now over twenty of us at Spa Terminus.

We open to the public on Saturdays, selling our full product range including raw, untreated Bella di Cerignola and Nyons olives, sott’oli and fermented vegetable pickles to complement our main offering.

Thursday 10 – 5, Friday 10 – 6, Saturday 8 – 5

Our business started at Borough Market in 2005, selling parmesan which we hand selected during regular trips to Italy.

Today we are in 3 Crown Square. As well as our ever-popular parmesan, we sell a small range of salami on the stall including rare breed products from the Basque country and a regularly changing special.
