We supply cheese paper with all of our products, which is both protective and breathable. We recommend wrapping each of your charcuterie and cheeses separately, and as tightly as possible to reduce their contact with the air. Then put them in a plastic food bag before putting them in the fridge, to give them some protection from the dry cold.
Whole charcuterie will keep happily for months in this way, and parmesan and brebis cheeses for several weeks. Mould is an integral parting of making quality salumi, and as long as there is enough moisture in the meat it can continue to develop moulds. These can be removed with the casing and do not affect the quality of the product.
