The deep red colour of this salsiccia comes from the chilli and fennel mix that also makes it so delicious. Although the mix used is similar to the Ventricina, because this looped salame is so much smaller it is aged for less time and has a chewier texture. It also tastes warmer, with the spice notes more dominant.
