A particular favourite at our stall in Borough Market, Pierre Oteiza’s saucisse seche is chewy and meaty. Its relatively large surface area means that it loses much of its moisture during its 2 months’ ageing. The meat is flavoured with piment d’espelette, a mild chilli used locally in place of black pepper, and garlic.
