Spicy, rare breed salami from Calabria. Free range.

This salame is made with meat from the prosciutto. Only salt and chilli are added before it is stuffed into the caecum. It is matured for at least three months, during which time it develops a robust, quite farmyardy flavour with spicy warmth.

Soppressata pairs excellently with other strong flavours, like herby Lombo and fresh Ciauscolo; or with the creamy mildness of Mozzarella.
