Traditional salami from Le Marche.

This regional speciality is hardly known beyond the Apennine mountains, but it is delicious. Ciauscolo is a spreadable salame (like Nduja) made with fresh garlic and orange peel, and packed tightly into its casing to make sure no air gets in.

Its flavour is fresh and zingy, and it goes well with vegetable antipasti and pickles; with spicy flavours such as Salsiccia Piccante; or in contrast with drier salumi such as Saucisse Seche.
