Among the most well-known Italian salami, finocchiona is seasoned with fennel. Carlo Pieri refuses to use cultivated fennel, so every September his mother collects pollen from the wild fennel that grows locally.
This is a large salame. To make the most of this product, we recommend using a domestic slicer.
