3 of our favourite salamis in a Christmas selection
Mauro and Chiara Cassetta make their award winning salami near Asti in Piedmont. They have their own Large White pigs that live free range in the fields around their production kitchen and they work up to 10 pigs each week.
For our seasonal selection this year we have chosen their Salame al Tartufo, an aromatic salame made with fresh black truffles and truffle oil: the perfect accompaniment to fresh pecorino or caciotta cheese. Next is their Salame al Barolo, seasoned with fresh garlic, nutmeg and Barolo wine from Le Langhe. The larger Salame Della Rosa gets its name from the thick Della Rosa casing that enables the long, slow ageing of this super tender salame made with Nebbiolo wine.
These salamis will arrive vacuum packed so keep them refrigerated. Once opened wrap them in the special paper provided and consume within 1 month
