Traditional, smoked salume from Trentino. Extensively reared.

From the neck of the pig, the fat marbling gives this salume its distinctive appearance. This is our favourite coppa: the meat is rubbed with a mixture of juniper, chilli, coriander, star anise, nutmeg, cinnamon, garlic and bay, then lightly smoked and aged for 11-12 months.

Pebble-shaped Mortandela is smoked in the same way. Tuscan Lombo also has a good balance of fat and lean, and like Finocchiona is richly herby which contrasts well with this Coppa's smokiness.

This is a large salume. To make the most of this product, we recommend using a domestic slicer.
