We love these juicy filets of oily Thunnus Alalunga fish either in a cannellini bean salad or stirred through pasta. White tuna or alalunga is more highly prized than Yellow Fin (albacore), with its delicate taste and silky texture. Luigi first served it to us on bruschetta topped with pink pepper, fresh mint and a spoonful of their organic extra virgin olive oil.
