Caught primarily at night between May and September these anchovies have their heads and guts removed and are packed in salt for a minimum of 6 months. At this point, instead of being filleted, they are jarred with some of their salt for filleting at home. If you can find the time then filleting your anchovies as and when you need them is a great way to keep them fresh for longer and enjoy their mellow meatiness 
Just remember to wash the fish in water first then dry it with kitchen roll. This removes the salt and makes the texture more pliable for filleting
