Anzio has been famous for octopus ever since Pliny said it was the best in the Roman Empire. Each octopus is slowly simmered in just boiling water to keep it tender and then put in a jar. It is preserved with the cooking water and can be cut into cubes and dressed with olive oil or made a classic octopus salad with potatoes and thinly sliced raw celery
