A lot of Italians start Christmas Day by serving small nuggets of the very best 'grana' cheese with a glass of Prosecco or Franciacorte. With this is mind the starting point for this hamper was 240g of our soft, sweet San Bernardino Parmesan.
As a contrast is a 240g chunk of Emilio Spada's fresh, milky pecorino that is in season throughout the winter. Serve it in thick wedges alongside a nutcracker and big bowl of Christmas nuts; it will be gone in seconds
Then there's 160g of our favourite rare breed Calabrian sopressata, made with sweet chilli for a fabulous flavour but no spicy heat. This salami is so brilliant to whip out and serve with drinks for a special Christmas treat.
We finished this small but perfectly formed hamper with a beautiful 120g fig salami and a jar of borettane onions pickled with pine nuts and raisins. The fig salami is a perfect on any Christmas cheeseboard, the agrodolce onions likewise.
