The best buffalo mozzarella comes from the Piana del Sele. This area, 90kms south of Naples, is the plain of the river Sele and has wet marshy land ideal for water buffalo. The curds are spun to create the velvety texture that holds the milk so well and the balls are then put straight in to the liquido del governo, the mixture of whey, water and salt that protects them during their journey to London where they arrive with us fresh every week
