Azienda Agricola Giuseppina Dolci is an organic farm in the Umbrian Appenines. At over 1000ms the land is wild and mountainous, not suited to conventional agriculture but pulses thrive in the harsh conditions and Giuseppina, her husband Antonio and children Domenico and Gloria cultivate over 30 different types. For soil health they alternate pulse crops with cereals – farro (emmer) for their cous cous and maize for their polenta - and pasture , a rotation that breaks weed and disease cycles and helps crops access more nutrients
