Azienda Agricola Giuseppina Dolci is an organic farm in the Umbrian Appenines. At over 1000ms the land is wild and mountainous, not suited to conventional agriculture but pulses thrive in the harsh conditions and Giuseppina, her husband Antonio and children Domenico and Gloria cultivate over 30 different types. For soil health they alternate pulse crops with cereals – emmer and maize for their polenta. Their emmer, the Farro di Monteleone, is the only farro in the whole of Italy to have been awarded DOP status. It is semi-pearled and is excellent in soups, stews and salads
