Azienda Agricola Giuseppina Dolci is an organic farm in the Umbrian Appenines. At over 1000ms the land is wild and mountainous, not suited to conventional agriculture but pulses thrive in the harsh conditions and Giuseppina, her husband Antonio and children Domenico and Gloria cultivate over 30 different types. For soil health they alternate pulse crops with cereals – emmer for their cous cous and maize for their polenta - and pasture , a rotation that breaks weed and disease cycles and helps crops access more nutrients
Roveja is a wild pea which had been grown in Umbria since medieval times and has been reintroduced in recent years. Rich in iron it can be used in soups or simply boiled with garlic and a bay leaf to serve on crostini dressed with extra virgin olive oil.
