La Scarpetta Extra Virgin Olive Oil Coratina. 2025 Harvest
Harvested in October & November 2025, three oils come to us from Cinzia Paci in Recanati, Le Marche. Cinzia has 1000 trees that she farms organically.
Cinzia had DNA analysis carried out on the olives to confirm the varieties and it was the Coratina trees that came as the biggest surprise. It’s a variety of olive widespread in Puglia and well known for intense and aromatic oil, that is exceptionally high in polyphenols. Polyphenols are micronutrients with strong anti-oxidant and anti-inflammatory properties.
High phenolic olive oils are robust with a bitter taste and persistent, peppery burn and Cinzia’s Coratina is intense and spicy with flavours or freshly cut grass and artichoke.
To try on: Salads and bruschetta with loads of garlic
1ltr tin or 3ltr bag in a box (an excellent way to stop contact with the air from degrading the oil)
