Fegatino, like the more well know ciauscolo, hails from Le Marche on Italy's east coast. Candido and Clotilde Passamonti make this long, thin salame with the same mix as their ciauscolo seasoned with orange peel and fresh garlic but with 15% liver.
It is soft and thus spreadable on hot toast creating a delicious zingy, creamy liver tang.
