Organic maize flour is obtained from the ottofile and violet corn varieties. A local mill stone grinds the cobs to a rustic texture that is perfect for polenta, desserts or to give a crunchy coating when cooking chicken and vegetables. The violet corn gives a beautiful flecked colour to the flour
