Lonzino di Fico (Slow Food Presidium)
The Slow Food presidium fig salami is made from dried Brogiotti figs
(a low yielding, very delicate fig variety) that are hadn't cut and mixed with
almonds, walnuts, star anise and Mistra, a local aniseed liqueur. The paste
is wrapped in fig leaves and hand tied with traditional cord to keep
throughout the winter. Serve with cheese.
