Fausto Guadagni's Pancetta Steccata is seasoned with black pepper and rosemary and then folded over and sewn up. It is aged for a year, pressed between 2 pieces of wood (the word steccare means to splint). After a year it is tender and aromatic and meant for eating uncooked. (By all means be extravagant and cook with it but think about having it thin and crispy on top of a salade tiède or braised lentils; allow the quality to shine through)
