The pecorino that we take from Emilio is his semi-stagionato, a medium matured cheese that is aged for about 2 months. It is made with the raw milk from his razza sarda sheep and, with its creamy pate and sweet, fruity flavour, is more of a table pecorino than a grating one. That said, it is delicious sliced in a salad or served with baby broad beans as a classic antipasto. So delicious and with such a small production, we can never get enough of it and are quite frequently sold out
