For June and July we've got a small quantity of Pecorino San Giorgio made by Alessandra Cau. The wheels are matured 5 months, longer than our semi stagionato but not long enough to have developed the spicy tang of the usual pecorino stagionato. They have a delightful, crumbly texture and are a lovely cheese for summer salads and cheese boards
